Dirty Rice

4 sausage links (your choice, sweet, hot, breakfast)
1 large onion chopped (about 1 cup)
1 green pepper chopped
1 red pepper chopped
1 clove garlic minced
2 cups rice (long-grain or converted white or brown)
4 cups water or stock (more if needed)
1 tsp Cajun seasoning (or ½ tsp cumin, ½ tsp paprika, 1 tsp oregano)

Cooks Tools - Large skillet with lid, or large pot with lid.

  1. Preheat the pan over medium high heat.  Crumble the sausages into the pan and sauté them with the onion until brown.  Add the peppers and garlic and sauté for two minutes. 
  2. Add thee stock, and scrape the bottom of the pan to release the fond. (Tip - Fond is the caramelized flavorful residue left is a pan after sautéing food. Fond is full of flavor and can be used to create a pan sauce or gravy.)  Add the rice, salt, pepper and seasonings and stir to combine. 
  3. Place the lid on the pan, turn the heat to low and  cook for 20 minutes for white rice, and about 45 minutes for brown.
