Avocado, Tomato and Corn Salsa
Photo Coming SoonThe creaminess of the avocado tastes great with the crunch of the fresh corn and tangy sweetness of the tomatoes. Super healthy too! High in Vitamin E, C, Lycopene, fiber and more. Serve on a bed of lettuce or with tortilla chips.
- 2 ripe Haas avocados, diced
- 1 lime
- 2 ears fresh corn, raw
- 1 pint grape tomatoes, halved, or quartered if large
- Salt and freshly ground pepper
- 2 TB julienne or minced fresh basil
Shuck the corn, and cut the kernels off the cob. Juice the lime. Place the juice and all the ingredients in a glass or ceramic bowl and toss to coat.
