Confetti Slaw
Photo Coming SoonKids love the colors and the tangy sweetness of this slaw. Super healthy too! High in Vitamin C, A, fiber, folic acid, B6, B1, B2, manganese and more. Serve with grilled meats, burgers, sandwiches or barbecue. My daughter Mary Grace likes to scoop it up with tortilla chips!
- 1/2 small red cabbage, shredded
- 1 small green cabbage, shredded
- 2 large carrots, shredded
- 1 green, red, yellow or orange pepper, sliced thinly
- 1/4 cup oil (canola, safflower, or light olive oil)
- 1/4 cup cider vinegar
- 1/4 cup pickle relish
- 2-3 TB sugar
- 2 tsp dijon mustard
- 1/4 tsp allspice
- Salt and freshly ground pepper to taste
Place the juice and all the ingredients in a non-reactive bowl (glass, plastic or ceramic)and toss to coat. Let sit for at least 5-10 minutes before serving to let the flavors combine.
Tip - If you like green onion, add a few chopped.
